Fluffy Foamy Snow Cookies

When the days get shorter and the temperature drop its that time to prepare your home for Christmas. Nothing beats the smell of fresh homemade cookies and candles in December.

This is a family recipe from my mom. Fluffy, foamy snow cookies easy made with lots of love.

Ingredients:

  • 250 g butter (room temperature)
  • 2 egg yolk
  • 2 tbs sugar
  • 340g flour
  • 2 baking tray
  • 2 pcs baking paper
  • 3 egg white
  • 250g powdered sugar
  • a touch of vanilla bourbon 

Mix butter, 2 egg yolks, 2 table soon of sugar and the flour until you have a smooth dough. Spread the dough on a baking tray covered with baking paper.

Beat the 3 egg white with powdered sugar and vanilla until stiff. Smooth out over the rolled out dough. Store outside or somewhere cool for 5-10 minutes.

Cut little pieces and put the cookies on a second baking tray with baking paper for 10-15 minutes by 170-180 degrees in the oven until they have a light gold color. 

Let the cookies cool off and enjoy the fluffiness.

Tip!  If you store them in a cookie jar make sure to use folie (aluminiumfolie) when you layer them in there so that the snow side looks bright and nice
